1 Point Muffins - The BEST!

Low fat Bran Muffins-
2 cups 100% Bran cereal & 1-1/4 cups warm water mixed together and left to sit for 10 minutes. To that add 1/2 cup unsweetend applesauce, 1 egg, 1/3 to 1/2 cup firmly packed brown sugar, 2 tsps. cinnamon (or more to taste), 1/2 tsp. baking soda, 1-1/2 tsps. baking powder, and 1 cup whole wheat flour.  Mix well and put in muffin cups or greased (pam spray works great) muffin tins and bake at 400 degrees for 18-20 minutes.  Makes 12 muffins.  They are best hot and don't keep very long but they make a healthy and filling snack.  Enjoy!

Once you mentioned these muffins I was completly distracted the rest of the post. Thanks for posting the recipe. I'll be trying them soon. Did you know that I've even lost about 10 pounds with WW? Crazy!

You mean, I could actually eat *something* instead of trying to sustain myself on the scant pieces of flesh I bite from the sides of my cheeks and my cuticles when I am out of points?

OOOOOoooo! I just started the big WW today. I have 30 pounds to lose in one month cuz we are going on a cruise. Do you Have any other secrets? By the way sorry I was only in Utah for a couple of days, (insane plane ride with a lap child!) but I'll be back longer in July.
